Herb-infused olive oils & vinegars; fresh & dried herbs; herb & plant seedlings; herbal soaps, salves, salts, & lip balms About Us Hello! We're Tim & Jocelyn, the Pickle Creek Farmers. We like to think of ourselves as Farmerteurs, or Farmer-Entrepreneurs. About 15 years ago, we gave up our Chicagoland chemistry jobs to do the crazy and near impossible: Thrive on a 100-acre family farm. Today we are the proud owners of Pickle Creek Herbs, a state-certified commercial kitchen, and Green Heritage Farms, a small certified organic herb farm in Southeast Iowa. We grow herbs, berries, tomatoes, and garlic that we then use to create herb-infused olive oils and vinegars, soaps, salves, and lip balms. We take the process from seed to store and make everything ourselves using original recipes perfected over the years. And yes! You can taste the difference! On our Web site you’ll read that our mission is to show how amazing herbs can be when they’re grown by passionate farmers who love their plants, their community, and their soil. We also have another, kind of save-the-world mission: To demonstrate how the small sustainable farm can thrive in today’s modern industrial world. We intend to do this through care and respect for the land, the community, and the consumer, and we hope this shines through in everything we do. After all, in the end we are no more than what we have given to others. Passion for life and respect for the land that sustains it: Above all, that’s what we hope to give. Browse through our Products for Sale Ingredients Please see our product descriptions for lists of ingredients. Practices (our standards for raising or making our products) Our farm (Green Heritage Farms) is USDA Certified Organic (IDALS Organic Producer #: CAH449TJE). We are former chemists who are really into soil chemistry and who believe in learning from nature. Our goal is always to create the ideal growing environment for our plants--get the chemistry right and the biology will follow. Life starts with the soil! Additional Information Taste is not a commodity! Our mission is to remind people how good food can taste when it is grown in well-loved and well-tended ground. We are the fourth generation to be working the soil on our 100-acre spread. We feel privileged and proud to be members of that group known as the "small, sustainable family farmers." |

Thyme Seedling, Summer variety
27 4 x 4 inch pots available. Order number of 4 x 4 inch pots.
Summer Thyme has a spicier, more pungent flavor than German Winter Thyme has. It also is a smaller, less woody plant. That means it's great both fresh and dried for eating and cooking. Like its names suggests, however, Summer Thyme is not nearly as hardy as its German Winter counterpart, and it will most likely be killed off during the typical Iowa winter. If you're looking for a thyme that brings it on while in season, Summer Thyme is your variety.

Ancho (Poblano) Hot Pepper Seedling
[OUT OF STOCK] 0 plants available.
The Ancho pepper is the dried version of the Poblano pepper. An immature Poblano is dark purplish green in color, while the mature fruits eventually turn a red so dark as to be nearly black. Anchos/poblanos are sweet and smoky. Their heat is mild (1,000-2,000 Scoville heat units). Poblanos are eaten fried, stuffed, or in mole sauces. They are also the pepper that is usually used in the popular chile relleno dish. Anchos can be used whole, in which case they are typically reconstituted by soaking them in hot water to soften them. Anchos are also sometimes ground into powder that is then used in spice rubs or for making mole, enchilada sauce, and chili. 100 days.

Ghost (Bhut Jolokia) Hot Pepper Seedling
[OUT OF STOCK] 0 plants available.
In 2007, Guinness World Records certified that the Ghost Pepper (Bhut Jolokia) was the world's hottest chili pepper (although in 2011 it was superseded by the Trinidad Moruga Scorpion). In 2004, the Ghost Pepper was given a rating of 1,041,427 Scoville heat units. For comparison, Tabasco red pepper sauce rates at 2,500–5,000 units, and pure capsaicin (the chemical responsible for heat in pepper plants) rates at 16,000,000 units. Bhut Jolokia is used as a food and a spice, and in northeastern India the peppers are smeared on fences or incorporated into smoke bombs as a safety precaution to keep wild elephants at a distance. The Bhut Jolokia plant starts out slow but eventually makes tall plants, exceeding 4 feet in favored locations. The thin-walled, wrinkled, pointed fruits reach 2-3 inches in length, ripening mostly to red. 100 days. Eat at your own risk!
