Wedel Grazing Acres started as a family owned and operated 100 head dairy farm in 2009. We took over for our father who had it for 15 years before us. We rotational graze all our cross-bred cows and also started raising almost grass fed (see below in practices for explanation), hormone-free and antibiotic-free steers and free-range berkshire hogs for our own use and to sell. Our cows graze all year except for forage in the winter months. We are very concerned with growing healthy food for our growing family of 3 boys.(and our latest addition is finally a GIRL!!!!) Our beef is very superior in taste and quality. Berkshire hogs are a heritage breed known for their exceptional flavor and is actually called a red meat. Our hogs our raised free range and fed a diversified diet of forage, apples, grain and milk from our pastured cows. We are very passionate about growing good meat and love knowing where our meat comes from and we want to make it available to people who don't have the oppertunity to raise their own. We are located in the farming community of Northeast Iowa. Our farm is a paradise for our small family to grow up on, with a wooded area and small creek meandering through our property and pastures. We care deeply for our land and animals and feel we have a superior product for your consideration.

Bratwurst ingredients: pork, water, corn suryp solids, salt, spices and monosodium glutamate

Pork Sausage ingredients: pork, salt, dextrose, sugar, monosodium glutamate, spices, spice extractives, BHA, propyl gallate, citric acid, propylene glycol, and partially hydrogenated cottonseed and/or soybean oil added to prevent caking.
Practices (our standards for raising or making our products)
Our land is seeded down to Pasture or Hay which results in very little erosion. Are calves are fed milk for three months with 1 lb. grain a day fed for first 3-4 months for health reasons. We rotational graze our animals throughout the growing season and feed a forage diet in the winter. Our steers are around 2 and 1/2 years old when we butcher them. The last 2 years of there life they get only grass and forage. So with getting 1 lb. grain for 3-4 months as babies, technically can not be called GRASS FED but in all reality probably are, that's for you to decide. :) Canvas Hoop buildings provide shelter for the animals in winter.
Our Meats are processed at Elma Locker and Grocery Elma, Iowa or County Line Locker Riceville, Iowa both are state inspected facilities.
These ribs are sooo unreal good! Here's a very easy fall off the bone way to fix them that i always use. Score the back with a sharp knife then rub them with onion, garlic and chili powder. Bake them in the oven at 200 degrees for 5-6 hrs. Slather them with your favorite bbq sauce and grill on low heat for half an hour or so. Then put back in roaster in the oven at 200 for 1-2 hrs or till suppertime. Delicious!!!!!!!!!!!
Here's the scrummy bbq sauce recipe i make to put on them: 1/2 c. brown sugar, 1/2 tsp. garlic salt, 1/2 tsp. pepper, 1c. ketchup, 1/2 c. molasses, 1 Tablespoon liquid smoke, 2 Tablespoons worcestershire sauce, 1/4c. spicy brown mustard( i usually use regular mustard) 1/4 tsp. cayenne pepper.....heat on the stove and slather on. Enjoy!
