Yoke S ranch is a family owned and operated cow/calf operation. There are 3 generations of us living on the ranch at this time. We raise Corriente cattle. Corrientes are a relatively small breed. A mature cow weighs about 900lbs. They are probably one of the oldest breeds of cattle in North America. They can be traced back to when the Spanish Conquistadores brought them to the shores of the new world in 1493. They are a heritage breed.
They are very athletic and hearty. They are also very versatile due to their good disposition.We use them for team roping and steer wrestling practice. We believe in the old adage that you are what you eat. I think that because the cattle are naturally athletic and active and they get a lot of exercise they are a good healthy choice. We believe that the healthy athletic cattle are much better for you than the sedentary couch potato kind of cattle.
We like the fact that the meat is low fat, low cholesterol and very lean. It has a very good flavor and the tenderness is remarkable. It has that old time natural taste that I remember from when I was a youngster.
We use no hormones, steroids or indiscriminate antibiotics. Any feed other than grass or hay that we use is all natural.
We are a member of the North American Corriente Associations Certified Corriente Beef program.

We are a grass-based, natural,free range operation. The whole ranch is seeded down to either pasture or hay ground. We raise no crops except cattle and hay.
The cows run on pastures, divided into paddocks and are rotated through those all year long. All of the different pens of calves have access to pasture most of the time. They are subsidized with enough feed to keep them healthy and satisfied.
We don't use any hormones or steroids and only use antibiotics on an individual basis to maintain the health of our animals. Nothing is more important to us than the health and well-being of our animals. We believe that if we take care of them;they will take care of us.
We consider our animals to be at least 98% grass-fed.
Due to their small size and slow growing rate, we wait untill they are about 4 years old before we harvest them. During their early years they may live off our property for some period of time. They are however, born and raised here and reside on the ranch for at least 2/3 of their lives.
Here is some nutrition information about Corriente cattle that we found interesting and exciting. In 2008, 4 ounces of Corriente beef was sent to BodyCote, Inc., a food science lab for analysis. This information is based on those results in comparison to other 4 oz. samples of meat data from USDA National Nutrient Database. On a nutritional level, Corriente beef surpasses the competition.
